11/2 cup flour
1 tsp. baking soda
1 tsp. salt
1-cup butter (2 sticks-room temperature)
3/4 cup packed light brown sugar
3/4 cup granulated sugar
2 large eggs
1 tsp. vanilla
21/2 cups rolled oats
11/2 cups *raisins
12 oz semi-sweet chips
* You can substitute raisins with 1/2 cup more chocolate chips if you prefer.
Preheat oven to 350, Grease 3-4 cookie sheets.
Sift flour, salt, soda & powder into a mixing bowl (set aside)
Cream together butter & sugars.
Add egg & vanilla and beat until light & fluffy. (scraping down sides of bowl as necessary)
Stir in flour mixture and on low (just until combined).
Stir in oats, raisins & chips.
Drop by heaping Tablespoon, (I use a small cookie scoop) onto cookie sheets, 1” apart.
Bake, rotating sheets halfway through until cookies have spread and are golden brown, but are still soft to the touch (10-12 min).
DO NOT OVER BAKE!
Quick Tip! If you prefer a crispier texture, bake the cookies for 16 minutes.
