1 box salted cod
6 potatoes (Idaho best)
1 med yellow onion (chopped fine)
2 eggs (well beaten)
1 tsp. parsley
Pepper to taste
Yellow Corn Meal
Saffola® oil for frying (You can use any light vegetable oil. We prefer Saffola®)
Boil cod in water, drain. Do this about 4 times. Set aside.
Cook potatoes and mash them.
Chop onion very fine and add to mashed potatoes
Add: Fish (flake the fish or break it up to mix in with potatoes & onion)
Beat eggs slightly and add to fish and potato mixture.
Add seasonings & mix together well with hands.
Shape mixture into patties and roll in corn meal to coat.
Fry on medium or medium high in 1/2” Saffola® oil in skillet watching so they don't burn.
Continue adding oil as needed.
Drain on paper towels.
These are as good cold as they are warmed.
