2 Cornish Hens (split in half lengthwise)
2 cups cooked *wild & white rice
Sauce:
1 stick butter
Juice from 1 squeezed lemon
1/2 small onion (sliced thin)
2-3 Tbls. Worcestershire sauce
Rinse hen halves (Set aside)
Prepare rice and while it is steaming, boil giblets in water till done. Chop and set aside.
When rice is cooked, mix together with giblets. Keep warm!
On stove top, prepare sauce from the rest of the ingredients and cook until onions are tender.
Place hen halves in a broiler pan bone side down, sprinkle with a little salt & pepper and baste with sauce.
Bake at 375º for about 30 min. (larger hens might need more time), basting with more sauce every 10 minutes.
Turn oven to broil, baste with any remaining sauce and broil till skin is slightly blackened; about 5-10 min. with door ajar.
*We use Uncle Ben’s® Wild & White rice from a box.
Alternative Method:
Prepare rice & mix with chopped giblets
But instead, stuff whole hens and truss
Bake as you would chicken or turkey for about 45 min. at 350º (basting occasionally with sauce)
