You may choose to roast your own chicken or take the meat from left over pieces you
prepared earlier in the week but I love the flavor of the roasted chicken from Costco…
I start out with about 1½ cups of chopped cooked chicken meat. (Not too fine)
Add:
1/4 cup diced celery
1/2 Tbls diced sweet onion
1/2 to 1 cup dried cranberries (Crasins®)
1/2 cup toasted pecans (cooled and coarsely chopped)
Mayo (too your liking)
Toast pecans at 350º (about 10 minutes or until fragrant).
Toss all ingredients together with mayo, starting with 1/2 cup (we don’t like our meat salads too wet and goopy)
Season to taste (I use Greek Seasoning® for just about everything)
Serve on Gruyère Gougère (Cheese Puffs), and you will have yourself a decadent lunch. Trust me!
