1 lb. fresh spinach
3-4 slices bacon
1 clove garlic (finely chopped)
1 medium onion
1 dash salt & pepper, and grate in a dash of nutmeg (optional)
Cream Sauce:
2 Tbls. butter
2 Tbls. flour
1 cup whole milk
Place spinach in a large pot of boiling water. (Leave in until "wilted", do not boil!)
Remove from heat, rinse in cold water, and squeeze dry.
Run through a food processor, pulse until chopped, and set it aside.
Process/pulse the bacon strips and saute until all moisture is gone.
Process/grind onion, drain, and add to bacon with chopped garlic, salt and pepper.
Make a medium cream sauce:
Using listed ingredients, starting with melted butter in pan on medium-low heat, adding the flour, and then slowly stirring in the milk.
Add spinach, onion and bacon mixture to the cream sauce and bring to a slow boil.
Remove from heat and serve.
