1/2 cup plain yogurt
3 Tablespoons lemon juice
1 Tablespoon Dijon mustard
3 garlic cloves, minced
1 teaspoon salt
1/2 teaspoon sage and oregano
Pepper to taste
2 to 3 pounds chicken pieces
1/2 cup bread crumbs
1/2 grated parmesan
Cayenne, salt & pepper to taste
Place first 6 ingredients in glass or plastic container.
Add chicken, toss well to coat.
Let chicken marinate, covered, at room temperature 2 hours, or over-night in the fridge.
Combine bread crumbs, cheese, salt and pepper in a large Ziploc® or plastic bag.
Place drained chicken, a few pieces at a time, in the bag and shake, coating well.
Arrange chicken pieces 1-inch apart on baking sheet, (coated with vegetable oil spray or lightly oiled.)
Bake at 375 degrees. 30 minutes for wings, 45 minutes to 1 hour for whole chicken pieces or chicken breasts.
You may have to place under the broiler at the end, to brown. (Don't Look Away!)
