3-4 pork chops (cubed) or about the same amount of boneless chicken thighs
1/2 medium onion (chopped)
1 cup rice
2 cups water or chicken stock
1/2 Tbls. cumin powder
Salt & pepper to taste
1 8oz can tomato sauce
1 4oz can diced green chilies (if desired) - Not for Mike 😊
Sprinkle pork chops or chicken thighs with salt and pepper.
Cube and add to 1 quart sauce pan with a drizzle of cooking oil.
(Pork now-a-days needs a little added fat so that it doesn’t dry out)
Add chopped onion and brown meat, slightly but still slightly pink inside.
Stir in rice, water, tomato sauce, cumin, 1 tsp salt & a dash of pepper.
Bring to a boil, reduce to low, and simmer (covered tightly) 25 minutes .
