1/2 cup (1 stick) butter or margarine
2 cups packed brown sugar
1-15oz can sliced pineapple (unsweetened)
Maraschino cherries
1 yellow cake mix (mixed according to box directions)
Melt 1/2 cup butter in 10” heavy (cast iron) skillet).
Sprinkle brown sugar evenly over bottom of pan.
Add pineapple slices with cherries to center of each.
Make up cake batter and pour over fruit.
Bake 40 minutes to 1 hour at 375º remove from oven and let stand 5 minutes on cooling rack.
Turn out onto cake platter. Some pineapple may stick to pan but don’t worry – Just stuff back into indentations in cake.
