1 lb ground beef, chicken or turkey
1 pkg. enchilada seasoning mix
2 cups (8oz. each) jack & cheddar cheese, or Mexican blend cheese (divided)
1 (16oz) can tomato sauce
Empty sauce can of water
1 pkg. corn tortillas
1 small can chopped olives
Brown and crumble meat.
Mix together tomato sauce, enchilada mix and water.
Add all but 1/2 cup mixture to meat.
In casserole dish, layer corn tortillas, meat mixture, olives, then cheese (ending with layer of tortilla and cheese).
Pour remaining 1/2 cup tomato sauce mixture over top.
Sprinkle with more shredded cheese.
Bake (covered with foil) for 30 minutes at 350º.
Slice & serve, as you do lasagna, with tossed salad on the side!
