6-8 ripe peaches or nectarines, or plums (sliced or cut in chucks) or 2 lbs. blueberries, or a combination of fruit
Plus any other fruit you want to add (You should have between 8-10 cups of fruit.)
Lemon juice
1/4 cup sugar
1 Tbls. cornstarch (more if you have lots of juice from fruit)
Topping:
1 cup (chopped) pecans
1 cup flour
11/4 oatmeal
1/2 cup dark brown sugar
1 tsp. cinnamon
pinch of salt
1 stick of butter, (cut into small pieces)
Sprinkle fruit with some lemon juice, the sugar and the cornstarch.
Mix gently and place into a 9x13" baking pan (which has been sprayed with a little cooking spray).
For Topping:
Mix all ingredients together (using pastry blender or with clean hands)
Sprinkle evenly over fruit in pan.
Bake at 350º for 45-50 minutes.
Serve warm with a scoop of vanilla ice cream. Yum!
