One or two racks of pork ribs (babybacks are best)
Sauce:
Add to saucepan…
1 chopped *green pepper
1 chopped onion
11/2 cup ketchup
1 cup water
2 Tbls Worcestershire sauce
1 Tbls mustard
1 Tbls. vinegar
1/2 cup brown sugar
1/2 tsp chili powder
Dash of cayenne pepper
Simmer while ribs are browning.
* I use celery instead of green pepper
Brown ribs approximately 30 minutes at 350º and drain off fatty juices.
Brush with sauce (use all of it) and bake (covered in foil) another 20 to 30 minutes or until meat starts to fall off the bone.
NOTE: If you're not in a hurry, lower the heat to 250º, cover with foil, then check every 30 minutesor so until very tender and meat starts to fall off the bone.
Also great on baked chicken!
