4 sweet potatoes
4 yams
11/2 cups brown sugar
1 to 11/2 cups *maple syrup
1 stick butter
*We use Log Cabin®
Peel potatoes and cut into quarters (lengthwise).
Parboil for about 10 minutes.
Slice & place in a casserole dish (sprayed with cooking spray). Set aside.
Combine brown sugar, syrup and butter in a saucepan
On medium-low heat, cook for 10 minutes, stirring often.
Pour mixture over potatoes. Bake about an hour at 350º basting often.
When done, pour off some of the liquid into a heat proof bowl or gravy boat.
Right before serving, heat in microwave and serve along side your casserole dish.
