1 Tbls. Butter
1/2 small onion (chopped fine) We used red because that's all we had.
1-2 cloves garlic (chopped very fine, but not minced)
1/4 cup butter
1/4 cup all purpose flour
2 cups chicken broth
2 cups half and half
1/2 lb fresh broccoli (chopped into small pieces)
1 cup carrots, julienned
1/4 tsp papkika
1/4 tsp. nutmeg
A sprinkle of salt and pepper (or to taste)
8 onces sharp white cheddar cheese (grated)
On medium heat:
Saute onion in 1 Tbs butter until translucent
Add chopped garlic and saute 1 minute, or until fragrant
Add the broccoli and carrots, and let them saute slightly
Add 1/4 cup melted butter mixed with 1/4 cup flour for thickener (stir well to break up and clumps of flour)
Add chicken broth and seasonings
Then, stir in half and half
Bring this mixture to a slow boil (just until you see it slightly bubble
Add grated cheese slowly (a little at a time) and stir soup well
Bring back to a slow boil and cook bout 5-10 minutes or until veggies are tender and soup is thicked (stirring often)
