4 cups “steamed” rice (2 cups raw)
cooked with oil not butter.
3-4 apples (pippin or granny smith cubed)
8 oz cheddar cheese (cubed)
1 lb deli ham (sliced in 1/4" slabs then cubed)
1 large red pepper cut in smaller cubes
1 small or l/2 large red onion (chopped fine)
1/4 tsp salt – dash of pepper
2/3 cup vinegar
2/3 cup salad oil
Throw in a few olives and/or peas for added color.
Toss all ingredients thoroughly!
