508 grams of water Room Temp
16.81 grams of fine sea salt (wisk nicea nicea)
747 grams of Bread Flour
3.74 grams of IDY (sprinkle all around)
Combine nicea nicea with wooden spatula before going into mixer. (use mixer as least as possible)
Using Dough hook, start with lowest setting 1. Mix approx. 1.5 minutes. You want it to be like oatmeal.
Let sit for 20 minutes to let it do nice nice
Put mixer on for 2-3 seconds to make nice and smooth.
Use generous amount of bench flour on counter and your hands and on scale. Put all dough on counter and sprinkle with bench flour. User scraper/cutter and cut into 3 even sections 15oz each
Make balls watching video, put each ball in a 6 cup gladware container sprayed with olive oil spray.
Let sit in fridge for 24 hours
