1 unbaked 9” pie crust
2 Tbls. butter
3 eggs
1 Tbls. Sherry
1/2 cup heavy cream
1/2 cup dark corn syrup (less 1Tbls.)
1/8 tsp salt
1 cup sugar
11/2 cups pecans (more for top)
1 tsp vanilla
Mix all ingredients in a blender or food processor except for decorative pecans. Only takes a few seconds.
Turn into pie shell and bake about 25 minutes at 400º
Decorate with pecan halves and bake another 10 minutes or until middle is no longer shaky.
Cool before serving!
