1 large red cabbage
1 medium onion (chopped)
1 cup cider vinegar
1 green apple (chopped)
1 cup brown sugar
3 Tbls. bacon fat
Slice and roughly chop red cabbage.
Transfer to large pot and add chopped apple,
onion, brown sugar, vinegar and bacon fat.
Sprinkle with salt and add about an inch of water.
Bring to a boil then reduce heat and simmer until
cabbage is real tender. About 3 hours.
Serve with Sauerbraten, but good with any roast.
