2 cups cubed potatoes (small reds are best)
1 1/2 - 2 cups left over roast (cubed)
1/2 onion (chopped)
Salt & Pepper to taste
2-3 Tbls. vegetable oil & or bacon fat (best)
Heat oil/fat in fry pan and add potatoes & onion.
(cover tightly with lid from a smaller pan and cook until potatoes are fork tender but not over cooked)
Add beef and heat through or until a little browned.
For an extra special treat, break a few eggs over top of hash while it's hot (space evenly)
Cover with lid and steam until egg yolks are filmed over.
