2 lbs raw shrimp
3 cups flour
11/2 tsp seasoned salt
1 Tbls. baking powder
1/2 tsp table salt
dash pepper
6 eggs
2 tsps. minced garlic
1 can evaporated milk
1 10oz bag frozen mixed veggies (corn,cubed carrots,peas, green beans)
Clean, peel and de-vein shrimp removing tail.
Smash by swirling in food processor or by mixing on med high speed in mixing bowl.
Stir and mix in all other ingredients.
Batter will be medium thin. “Goopy”
Drop by Tbls. in hot oil.
Remove when golden brown with slotted soon and sprinkle lightly with salt.
Tip: To remove the tails, pinch the end of the tail and pull it away from the meat, then using a paring knife, cut along the shrimp back just deep enough to expose the vein.
Remove this vein by lifting one end and zipping it off.
