2 Tbsp olive oil
2 pounds stew meat (I used boneless short ribs-OMG!)
Salt and pepper to taste (no need to salt, really, soup mix has enough)
3 cups beef broth (I used beef stock)
1 package Knorr's® Vegetable Soup Recipe Mix
1 Tbsp Worcestershire sauce
1 small onion diced
2 cups mushrooms sliced
3 garlic cloves minced
1/4 cup water
3 Tbsp cornstarch
In a large skillet over medium high heat add the olive oil.
Salt lightly as desired, and pepper the meat pieces.
Add in batches to sear on both sides until brown, but do not cook throughout.
Add the meat to the slow cooker.
Add the beef broth, soup mix, onions, mushrooms, and garlic.
Cook on low for 5-6 hours or high 3-4 hours.
30 minutes before it is done cooking, mix together in a small bowl the water and cornstarch.
Stir it into the slow cooker and allow it to thicken.
Serve over pasta or mashed potatoes.
