Busy Day Lemon Cheesecake

Recipe from Aunt Naomi (This recipe comes with a personal memory)

Uncle Joe's Poem:
When the family gathers near the holly.
All our hearts are oh so jolly
The presents are stacked under the tree.
When the 1st one’s opened all the family yells, “Gee”.
We all eat to our hearts content, but can’t wait to open the presents.
Mike gets toys, Dad gets shirts, and someone gets a tie - but poor Joe - he doesn’t get any Philadelphia pie.
Tomorrow our family will be guessing, if we will have to eat that crumby dressing.
But don’t worry, we won’t cry.
Because next year we will get to eat Philadelphia Cream Cheese Pie.

Ingredients

1 8oz pkg cream cheese (softened)
2 cups whole milk (separated)
1 pkg Jell-O lemon instant pudding
1 *graham cracker crust (cooled)  (*See Sour Cream-Cheese Pie Crust)


Instructions

Blend ½ cup milk with sour cream
Add remaining milk and pudding mix.
Beat slowly until well mixed (1 min) don’t over beat! Pour at once into graham cracker crust. (No baking needed)
Sprinkle more crumbs over top if desired.
Chill at least one hour before serving!

For chocolate cheese cake use chocolate pudding mix and substitute chocolate wafers for crust if desired.
