8 pork chops (cubed)
1 lb pork sausage (cut into 1/4" pieces)
3 bags stuffing cubes or 4 cups chopped stale/dry bread cut in cubes (either should be seasoned with poultry seasoning)
Chopped Turkey Giblets
1 small onion (chopped)
1/2 cup celery chopped (or celery salt)
1 cube butter 2 eggs (slightly beaten)
*Giblet broth or chicken stock
Brown/Stir-fry sausage & cubed pork chops on medium heat. (Do not crisp!) Drain fat.
In a rather large pot or bowl, toss meat, including chopped giblets with bread stuffing.
In small saucepan, cook onion and celery with butter until veggies are tender.
Add to bread & meat mixture and toss with beaten egg.
Add giblet broth a little at a time and mix with hands until desired consistency. (Not too wet!)
Season with sage and poultry seasoning if using stale bread!!
Turkey Giblets:
rinse well, and boil in 1 1/2 qts. salted water until no longer pink.
Reserve broth!
Chop and add to stuffing.
